Homemade Chicken Zucchini Noodle Soup - GI 365
You can make this chicken zucchini noodle soup at home at any time of the year. It's healthy and comforting. This meal is filling and will warm you up from the inside out. It has lots of vegetables, tender shredded chicken, and tasty herbs.
Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked shredded chicken
- 2 medium zucchini, spiralized
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions:
In a large pot, heat the olive oil over medium heat
Add the chopped onion, sliced carrots, and sliced celery
Cook until the vegetables are softened, about 5 minutes
Add the minced garlic and cook for an additional minute until fragrant
Pour in the chicken broth and bring to a simmer
Add the shredded chicken, spiralized zucchini noodles, dried thyme, and dried oregano
Let the soup simmer for about 10 minutes until the zucchini noodles are tender
Season the soup with salt and pepper to taste
Serve hot, garnished with fresh parsley
