Almond Meltaway Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 1/4 teaspoon salt
- 3/4 cup finely chopped almonds
- Additional powdered sugar, for coating
Instructions:
In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy
Add the almond extract and vanilla extract, and mix until well combined
In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt
Gradually add the dry ingredient mixture to the wet ingredients, mixing until a soft dough forms
Stir in the finely chopped almonds
Cover the dough and refrigerate for about 30 minutes to firm it up
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
Shape the dough into small balls and place them on the prepared baking sheet, spacing them a couple of inches apart
Bake in the preheated oven for about 12-15 minutes, or until the cookies are just starting to turn golden around the edges
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes
While still warm, gently roll the cookies in additional powdered sugar to coat them
Transfer the coated cookies to a wire rack to cool completely
Once cooled, store the Almond Meltaway Cookies in an airtight container
