Creamy Cheesy Spinach Yogurt
Ingredients:
- 2 cups fresh spinach, chopped
- 1 cup plain yogurt
- 1/2 cup grated Parmesan cheese
- 1/4 cup cream cheese
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes optional
- 2 tablespoons olive oil
- 1/4 cup chopped onions
- 1/4 cup grated mozzarella cheese for topping
Instructions:
Put olive oil in a pan and heat it over medium-low heat
Add the chopped onions and minced garlic
Saut for about two minutes, until the onions start to turn clear
It should take about 34 minutes of cooking after adding the chopped spinach for it to wilt
Put plain yogurt, cream cheese, grated Parmesan cheese, salt, black pepper, and red pepper flakes, if you want, into a mixing bowl
Mix until it's smooth
Add the spinach that has been cooked to the yogurt and cheese mix
Mix everything together well
Start by heating the oven to 350F 175C
Put the creamy spinach mixture in a baking dish and sprinkle grated mozzarella cheese on top
It should be baked in a hot oven for 15 to 20 minutes, or until the cheese is bubbly and golden brown
Grab it from the oven, let it cool for a bit, and then serve it hot
Use your smooth, cheesy spinach yogurt as a dip or as a side dish
