MMM!!! Easy homemade carrot cake recipe - so moist and SOOO good!
This vegan carrot cake is very moist and tastes great. The spices and sweetness make it just right. It's easy to make and will look great!
Ingredients:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1 cup unsweetened applesauce
- 1/2 cup maple syrup
- 1/2 cup almond milk
- 1/3 cup coconut oil, melted
- 2 tsp vanilla extract
- 2 cups grated carrots
- 1/2 cup chopped walnuts optional
Instructions:
Preheat oven to 350F 175C
Grease and flour a 9x13 inch baking pan
In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt
In a separate bowl, mix together applesauce, maple syrup, almond milk, coconut oil, and vanilla extract
Stir wet ingredients into dry ingredients until just combined
Fold in grated carrots and chopped walnuts
Pour batter into prepared pan and smooth the top
Bake in preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean
Allow cake to cool completely before serving
