Power Chickpea Hummus Bowl



This Power Chickpea Hummus Bowl is a nutritious and satisfying vegan meal packed with protein, fiber, and flavor. Quinoa and chickpeas provide a hearty base, while fresh vegetables add crunch and color. The creamy tahini dressing ties everything together for a delicious and wholesome dish.

Ingredients:

  • 1 cup cooked quinoa
  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Sesame seeds for garnish optional

Instructions:

Add the cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, avocado, and cilantro to a large bowl

Shake tahini, lemon juice, garlic powder, salt, and pepper in a small bowl until well mixed

Add the dressing to the quinoa and chickpea mix and toss to coat everything

Put the mix into bowls for serving

If you want, you can sprinkle sesame seeds on top

Serve right away and enjoy!
